@whatsgoodberto's Cheesy Vegan Breakfast Burrito with Violife

Ingredients:

  • ½ cup Violife cheddar shreds
  • 1 package of firm tofu (drained)
  • 1 teaspoon garlic powder
  • 2 tablespoons nutritional yeast
  • Turmeric
  • Black pepper
  • Salt 
  • ½ medium green bell pepper (chopped)
  • ½ medium red bell pepper (chopped)
  • Kale (chopped)
  • 1 tablespoon olive oil
  • Plant-based butter
  • Tortilla

Directions:

  1. Place kale in a small bowl and massage with olive oil and salt and set aside.
  2. Add butter to pan over medium heat and add crushed tofu.
  3. Mix in garlic powder, nutritional yeast, turmeric, black pepper and salt.
  4. Add in Violife cheddar shreds along with green and red bell peppers; mix.
  5. Ensure that cheese is melted before removing from heat.
  6. Add tofu scramble to a tortilla along with the massaged kale.
  7. Wrap tortilla and enjoy!
