Watermelon Orzo Salad With Colavita Olive Oil

Ingredients:

  •  ⅔ cup Colavita Orzo
  •  1 tbsp mint, chopped
  •  4 cups watermelon, diced
  •  1 cucumber, diced (about 3 cups)
  •  Salt and black pepper, to taste
  • ½ cup feta cheese, crumbled
  •  ½ cup pistachios, roughly chopped (optional)
  •  Zest from ½ a lemon
  • For Dressing:
    •  Colavita Olive Oil
    •  Colavita Balsamic Vinegar
    • ½ tsp cumin
    •  1 tbsp fresh lemon juice

Directions:

  1. Cook orzo in salted, boiling water according to package instructions, about 10 mins.
  2. Drain well and pour into large bowl.
  3. In small bowl, combine Colavita Olive Oil, Balsamic Vinegar, cumin, and lemon juice.
  4. Pour over orzo and stir to combine. Let cool slightly.
  5. Add watermelon, cucumber, pistachios, and feta cheese to orzo and stir.
  6. Season with salt and pepper to taste.
  7. Garnish with crumbled feta and fresh mint.
