Watermelon Orzo Salad With Colavita Olive Oil

Ingredients:
- ⅔ cup Colavita Orzo
- 1 tbsp mint, chopped
- 4 cups watermelon, diced
- 1 cucumber, diced (about 3 cups)
- Salt and black pepper, to taste
- ½ cup feta cheese, crumbled
- ½ cup pistachios, roughly chopped (optional)
- Zest from ½ a lemon
- For Dressing:
- Colavita Olive Oil
- Colavita Balsamic Vinegar
- ½ tsp cumin
- 1 tbsp fresh lemon juice
Directions:
- Cook orzo in salted, boiling water according to package instructions, about 10 mins.
- Drain well and pour into large bowl.
- In small bowl, combine Colavita Olive Oil, Balsamic Vinegar, cumin, and lemon juice.
- Pour over orzo and stir to combine. Let cool slightly.
- Add watermelon, cucumber, pistachios, and feta cheese to orzo and stir.
- Season with salt and pepper to taste.
- Garnish with crumbled feta and fresh mint.
