Shrimp & Vegetable Scampi Skewers with I Can't Believe it's not Butter!

Ingredients:

  • 1 pound large shrimp, peeled and deveined 
  • 1 zucchini or yellow squash, sliced 
  • 1 small Japanese eggplant, sliced 
  • 1 cup grape tomatoes 
  • 2 tablespoons lemon juice 
  • 3 cloves garlic, chopped 
  • 20 Sprays I Can't Believe it's not Butter original spray
  • chopped fresh parsley (optional)

Instructions:

  1. Combine shrimp, vegetables, lemon juice and garlic in medium bowl. Season with salt and pepper. Cover and marinate 10 minutes. 
  2. Alternately thread shrimp and vegetables onto skewers*. Grill or broil, turning once and spraying with 10 sprays I Can't Believe It's Not Butter!® Spray Original, 4 minutes or until shrimp turn pink. 
  3. Just before serving, spray with remaining 10 Sprays. Garnish with parsley if desired. 

*If using wooden skewers, soak in water at least 30 minutes prior to use.
