Oriental Vegan Rice

Ingredients:

  • 1 teaspoon of sesame seed oil
  • 3 cups of cooked Rico long grain rice
  • 2 oz. carrots
  • 2 oz. red peppers
  • 2 oz. onions
  • 2 oz. purple cabbage
  • 3 oz. mushrooms
  • 2 oz. yellow squash
  • 2 oz. soy sauce
  • 1 oz. scallions

Directions:

  1. Heat a skillet over medium heat, pour the sesame oil, then add the vegetables little by little, start with the carrots, onions, cabbage, peppers and then with the yellow squash and mushrooms.
  2. Once the vegetables are soft, add the rice and soy sauce.
  3. When everything is well mixed, it will be ready. Decorate with scallions.
