Oriental Vegan Rice

Ingredients:
- 1 teaspoon of sesame seed oil
- 3 cups of cooked Rico long grain rice
- 2 oz. carrots
- 2 oz. red peppers
- 2 oz. onions
- 2 oz. purple cabbage
- 3 oz. mushrooms
- 2 oz. yellow squash
- 2 oz. soy sauce
- 1 oz. scallions
Directions:
- Heat a skillet over medium heat, pour the sesame oil, then add the vegetables little by little, start with the carrots, onions, cabbage, peppers and then with the yellow squash and mushrooms.
- Once the vegetables are soft, add the rice and soy sauce.
- When everything is well mixed, it will be ready. Decorate with scallions.
