Lemon Cake with Quaker Oat Flour

Ingredients:

  • 1 C. Quaker Oat Flour
  • 1 Lemon, zested (1 Tbs)
  • 1/2 C. Greek Yogurt
  • 1/3 C. Vegetable Oil
  • 3 Eggs
  • 1 Tbs. Vanilla extract
  • 1/4 Tsp. Almond Extract
  • 1/2 C. Ground almonds
  • 2 Tsp. Baking powder
  • 1/2 Tsp. Salt
  • Icing sugar, for dusting

Instructions:

  1. Pre heat oven to 350 degrees Fahrenheit, and line a 9-inch round, greased cake pan with parchment paper
  2. In a large bowl, combine sugar and lemon zest
  3. Whisk in wet ingredients
  4. Add oat flour, almonds, baking powder and salt
  5. Pour mixture into pan and bake for 35 minutes
  6. Let rest for 15 minutes before tipping out to finish cooling
  7. Dust with icing sugar, and slice for serving
