Lemon Cake with Quaker Oat Flour

Ingredients:
- 1 C. Quaker Oat Flour
- 1 Lemon, zested (1 Tbs)
- 1/2 C. Greek Yogurt
- 1/3 C. Vegetable Oil
- 3 Eggs
- 1 Tbs. Vanilla extract
- 1/4 Tsp. Almond Extract
- 1/2 C. Ground almonds
- 2 Tsp. Baking powder
- 1/2 Tsp. Salt
- Icing sugar, for dusting
Instructions:
- Pre heat oven to 350 degrees Fahrenheit, and line a 9-inch round, greased cake pan with parchment paper
- In a large bowl, combine sugar and lemon zest
- Whisk in wet ingredients
- Add oat flour, almonds, baking powder and salt
- Pour mixture into pan and bake for 35 minutes
- Let rest for 15 minutes before tipping out to finish cooling
- Dust with icing sugar, and slice for serving
